No matter what you do, there are simple desserts in life you must try! The vegan plum tart is one of those. This easy recipe is completely adaptable to your season - you can use apples, pears, summer fruit or just the good 'ol chocolate ganache (find the recipe in search). Completely vegan and refined sugar free.
- 1/4 cup/60 ml almond milk
- zest of one lime (optional)
- 2 cups/230 g spelt flour
- 1/2 cup/75 g buckwheat flour (or 1/2 cup extra spelt flour)
- 1 tsp cinnamon
- 1/4 cup/60 ml coconut oil (melted)
- 2 cups/350 g plums (or other seasonal fruit)
- 1/4 cup/50 g coconut sugar
- 2 Tbsp corn or arrowroot starch
- pinch salt
- 1 tsp vanilla extract
- 1 Tbsp lemon juice
Make the simple crust; mix all the ingredients in one bowl. Knead the dough until it comes together and roll it on a floured surface with a rolling pin. Using a buttered tart tin or smaller tins, mould the crust into it. (If you don’t have a tart tin, easily cut out circles with a big cookie cutter and pinch the sides of the dough together).
Cut the seasonal fruit and mix it with coconut sugar, starch, salt, vanilla extract and lemon juice. Pour onto the dough and bake at 190 degrees Celsius for at least 20 minutes (depending on the size of your tart.
Once baked, enjoy with a vegan ice cream. Yum!
See the ganache recipe if you rather use it instead of fruit. Bake the tart for 15 minuter without any filling. Once cooled down, pour over the ganache and leave in the fridge until hard.
