This is a recipe when you have an incredible craving for sweets and can make it in under 20 minutes. It’s very easy and super delicious. If you’re a fan of coconut you will love this coconut explosion!
- 1 cup rolled oats
- 1/2 cup ground almonds
- 1/2 cup desiccated coconut
- 4 Tbsp coconut oil, melted (you could also use ghee butter or cocoa butter)
- 4 Tbsp honey
- 1 tsp vanilla
- 1 tsp baking soda, dissolved in 2 tbsp nut milk (or milk of your choice)
- a pinch of sea salt
- a bit of rum
Preheat the oven to 180 C. Blend all ingredients until well combined. Using your hands make balls and form into cookies. Bake on baking paper for about 12 minutes. Let them cool and drizzle with your frosting.
- 1/2 cup cashews (soaked for at least 2 hours)
- 3 Tbsp agave
- 3 Tbsp cacao butter
- 2 tsp vanilla
- pinch of salt
- water as needed
Blend all ingredients till smooth. Add them onto your cookies.
