Sugar-free cheesecake with berries

This is a very easy recipe and I love making delicious desserts that are quick and on top sugar-free! This is a very berry cheesecake. Preparation time is 10 min or less, baking time is 45min.

Ingredients:

  • 5 eggs
  • 1 cup greek yogurt
  • 1 cup creme fraiche/ creme cheese or mascarpone
  • 1/2 cup buckwheat flour (or any flour you would like to use)
  • 1/4 cup rice syrup (or honey, maple, any other sweetener you use)
  • 1 lemon (juice)
  • pinch of salt

For the topping you can add whatever you have in your fridge, it can be a mix of berries with honey and water or bananas mashed with dates, there are endless possibilities!

Preheat the oven to 180°C, and grease a cake tin with coconut oil. Mix every ingredient and pour it into the cake tin (yes it’s that easy). Bake in the oven for 40 minutes, or until cooked through. Meanwhile, figure out what the topping will be on you cake. Mine were mixed organic berries with stevia and water and a bit of coconut oil to stay firm. Remove the cheesecake from the oven, and leave to cool, before carefully transferring to a plate.

This was also my lunch and a breakfast, what can I say, I’m a cheesecake maniac 🙂
