Hi all from Crete… Just before I left Ljubljana I was crazy and in one day whipped up four recipes for you. Even though it was an incredibly hectic time, they turned out wonderfully. So first one up is a fluffy creamy explosion called a Raw Soufflé. Who loves a good chocolate soufflé, put your hands up! Yes me too, but I just cannot bring myself too eat it (maybe for a really special occasion). So I got inspired by blogger This Rawsome Vegan Life and made a different version of a Raw Molten Lava Cake. Home chefs have been intimidated by these cloud-like desserts for years. Well, not anymore! This raw soufflé is so easy to make and is put together with only good healthy ingredients. Check it out!

Ingredients

  • 1/2 cup oats (I used spelt)
  • 1/2 cup walnuts
  • 1/3 cup cacao powder
  • 1/4 cup linseed
  • 1/2 cup dates (soaked for 30 min)
  • 1/3 cup raisins (maybe a bit more)

Liquid Chocolate

  • 1/3 cup melted cacao butter (if you don’t have it use coconut oil)
  • 1/4 cup maple syrup
  • 1/3 cup dates
  •  1/3 cup cacao powder
  • pinch of salt
  • 1 tsp mint extract or fresh mint
  • a bit of coconut milk

Prepare your muffin tins with paper. Blend your walnuts, linseeds, oats and cacao powder into flour like consistency. Add the dates and raisins and mix until it starts to really stitch together. Don’t use up all of your mix! You need some for the tops. Now use your mix and press into the bottom and sides of lined cupcake tins and put in the fridge.  Use the rest of the mix to make the tops by shaping it into cookie like shape, which go into the fridge as well while you do your melted chocolate.

Blend all ingredients until smooth, adding the coconut milk as needed. It hardens quite quickly so be shire you make it right at the end. Blend until you get a smooth but creamy consistency. Take the cakes out of the cupcake molds and pour the molten mixture into each one, filling up almost to the top. Now carefully press the tops onto the cakes, gently pressing together the edges. Flip over and decorate with mint. Serve a be worshipped 😉
