Raw Lemon Truffles

I don’t have a blender, yes yes, I know I told you that a million times. I’m buying it this week, meanwhile I have to work with what I have. These are so simple that it’s funny! No sugar, gluten free, dairy free… Healthy and delicious! I made these for a Raw Pot Luck in Auckland. Potlucks are the perfect place to learn through experience by eating, bringing your favorite raw food dish or dessert, and by meeting other enthusiastic people. They enjoyed my truffles so I guess it’s safe to share the recipe 🙂

Ingredients

  • 1 cup unsweetened desiccated coconut
  • plus 1/2 cup for coating
  • 1 cup ground almonds
  • 4 tbsp extra virgin coconut oil
  • 4 tbsp rice malt syrup (any sweetener you prefer)
  • zest of one lemon
  • juice of one lemon
  • 1 tsp pure vanilla extract
  • a pinch of sea salt

Chocolate coating (optional)

  • 4 tbsp extra virgin coconut oil
  • 4 tbsp extra raw cacao
  • 1 tbsp of rice malt syrup
With hands mix all the ingredients together (except the coating). When it’s a dough consistency, form small balls.

In a separate bowl, add the extra coconut. Roll the balls in the coconut until well coated then transfer to a plate. Place in the fridge for at least half an hour to set.

For the coating, mix every ingredient together and pour over the truffles. Refrigerate and enjoy!
