What a week! I know I skipped our raw dishes from Friday at Matthew Kenney Cuisine, but there was not really much to show you because were only plating one dish and the same goes for today. Ww have made a delicious raw ceviche using coconut meat, cinnamon rolls with vanilla cream and a lot of different cheeses and raw breads.
But guess what, my best friend Liza arrived on Sunday showing off her Indonesian tan and energy. We spent the whole Sunday cruising around Santa Monica, I showed her the best coffee places, organic, veggie restaurants and smoothie bars. Like me, she went straight to Whole Foods and spent almost the night there. She is also in her own little heaven right now. Maybe you think that we are a bit crazy, asking almost every sales clerk if the coconut water or almond milk that we are drinking is raw and unsweetened. And that it makes us look snobbish, but hey we are snobs with glowing skin. Basically I think it’s all worth it.
On that note I am presenting another recipe that will make your skin a happy hippo. Here is a simple avocado dressing that you can add to your salad/pasta/quinoa etc.
- 1 large (or 2 small) ripe avocado
- 1/4 cup olive oil or grape seed oil
- 1 handful fresh cilantro
- 1 jalapeño, stem and seeds removed
- 1 clove garlic
- juice from 1 lime
- 1 Tbsp honey
- 2 Tbps apple cider vinegar
- 1/4 cup water (you may want more if you want it thinner)
- pinch of salt and pepper
Now here comes the hard part, just kidding, blend all of your ingredients together except the olive oil, add that right at the end and blend again.
