Raw Apple Parfait


With Fall in the air, our thoughts immediately turn to harvest recipes, apple picking and all the flavors of Autumn. One of my favorite recipes is this remarkable Raw Apple Parfait that combines all the deliciousness of the classic fair favorite, with the difference that it’s sugar free, raw, gluten free and vegan. This is a wonderful light dessert that has a crunchy crumble on top, delicious caramel cream layer mixed with refreshing apples. An apple parfait can be served as a high tea snack or a dessert after dinner or lunch.


  • 1 cup hazelnuts
  • 1/3 cup oat flour
  • 2 Tbsp coconut sugar
  • 2 Tbsp maple syrup
  • 1 Tbsp cinnamon

In a blender turn hazelnuts into a flour. Combine all ingredients by hand and crumble onto a Teflex sheet. Leave in dehydrator overnight.


  • 1 cup agave
  • 1/2 cup macadamia
  • 2 Tbsp pine nuts
  • vanilla
  • lemon juice
  • pinch of salt

Blend everything until smooth.


  • 3 apples
  • 4 Tbsp caramel (recipe on top)
  • 2 Tbsp lemon juice
  • salt
  • vanilla

Blend everything until smooth.


  • 2 chopped apples


In your glass first layer the crumble, than add chopped apples, caramel and cream. Repeat until full, end with the crumble.
