This is my favourite season, it’s pumpkin season! And If I could be any veggie in the world, can you guess which one I would be? Yep I would be a pumpkin for sure! I could easily base my whole blog about pumpkin and sweet potatoes, one of my two favourite sweet vegetables. And here is my all around recipe for fries which can be used in any root vegetable – parsnip, sweet potato, pumpkin etc.
- half of Hokaido pumpkin (or any kind of pumpkin)
- 3 Tbsp melted coconut oil or ghee
- 4 Tbsp cornmeal
- 1 Tbsp salt
Cut your pumpkin into fries like shape and coat them in melted ghee butter. Than add salt and cornmeal. Bake on 220C for 40 min or until crisp and brown.

Just an example of what your dipping sauce can be next to your fries. Mix everything together and serve with fries.
