Healthy Summer Popsicles

I'm incredibly happy that I'm writing this recipe on our porch in Slovenia where we are roasting in an oven at 36 degrees Celsius. I have to confess that we have a sneaky pool where I can cool my "tushy" and enjoy the sun. Next to our pool we have a veggie garden and a gazillion fruit trees, pure bliss! Of course there are strawberries everywhere, well only those that weren't eaten by cute little deers (that are driving my innocent mother a bit mad). The ones we managed to save we made these healthy summer popsicles which are perfect for cooling off. My step dad devoured three of these yogurt pops yesterday, in a span of two or three hours. In our family we don't really count calories, but we do like to know where our ingredients come from. These are made with a organic goat yoghurt which can be substituted with coconut yoghurt for vegans and summer strawberries. Hopefully you will try these easy popsicles and enjoy them with your little ones. Maybe just try to refrain from eating 3/4 of the recipe at once, ok? Looking at you dear step daddy! ;)

  • Ingredients
  • 1 cup goat yoghurt
  • 2 bananas
  • 1 tsp vanilla
  • 1 cup strawberries
  • 2 Tbsp agave

For these easy healthy summer popsicles you only need a blender. First blend the yogurt, banana and vanilla. In the popsicle mold pour the yogurt mixture only by half. Clean the blender and add your strawberries and agave (I’ve added a bit of rhubarb as well) and blend again. Pour the strawberry mixture onto the yogurt mixture. With a toothpick make swirls. On top you can sprinkle a bit of cacao nibs or chopped dark chocolate.  Insert a popsicle stick and put your popsicles into the freezer for at least 4 hours.

Once frozen, lightly pour warm water over the outside of the popsicle mold. Pull and serve immediately.
