My boyfriend and I had a huge craving for pancakes, but we wanted to get some protein in our meal as well, so we decided to use good old neighbours cottage cheese. Sorry vegans, but these are not for you. But they are a healthy protein packed pancakes that give you boost! Gluten-free if desired and sugar-free.
The ingredients are simple and and the batter is made in a blender! You just chuck everything in.. blend… make! Such a quick and easy dinner to do. Add your favourite toppings like blueberries, strawberries or banana and maple syrup. Pure heaven!
- 1 cup gluten-free rolled oats
- 1 medium banana
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 2 eggs
- 1/2 cup cottage cheese
- 5 tablespoons unsweetened vanilla almond milk
Place all ingredients in a blender and blend until completely smooth, about 30 seconds.
Lightly coat a pan with coconut butter and heat over medium low heat. Drop batter by 1/4 cup onto skillet. Cook until bubbles appear on top. Flip cakes and cook until golden brown on underside. Do the same with the remaining batter.
