Healthy Energy Bars

Simple, 6 ingredient energy bars that are tender, chewy and so easy to make. Chocolate and almond butter make these bars irresistible without any of the guilt.

  • 1 cup/175 g dates or figs
  • 1/4 cup/60 ml maple syrup
  • 1/4 cup/60 ml almond butter
  • 3 Tbsp chia seeds
  • 100g dark chocolate
  • 1 1/2 cup/135 g oats

Place dates or figs in a food processor and mix until small bits remain and they form a ball. Transfer to a large mixing bowl and add oats, chia, and chopped chocolate. Stir with a wooden spoon, breaking down the dates so they disperse fairly evenly throughout the ingredients. Warm maple syrup and almond butter in a small saucepan and pour over dry ingredients. Stir quickly to evenly coat. Transfer to a shallow pan lined with parchment or plastic wrap and top with another piece of plastic wrap and use your hands to form the mixture into a tight square with a uniformly flat top. Still covered, pop them into the freezer to set for 15 minutes. Remove and cut into 10 bars. Optional: coat them with melted chocolate and freeze again.
