Healthy Christmas Apple Pie

Christmas is near and I am not in a ho ho ho mood at all! It’s summer here in New Zealand and it feels unnatural to have Christmas in your bathing suit. I remember when I was little, I arrived in Auckland in December and I was really sad. My dad asked me why am I sad and I answered “but dad, Santa is not coming to New Zealand, it’s to hot for him here!” and he replied “don’t you know that Santa comes to New Zealand in his bathing suit!” Of course I believed him, I was 6 years old!

Now I’m the one in the bathing suit doing healthy Christmas goodies for Santa haha. Here is a healthy Christmas Apple Pie, I really love this recipe.

Dough

  • 2 cups rolled oats
  • 2 cups almond flour
  • ¾ cup coconut sugar
  • 1 tsp baking soda
  • 1 tsp salt
  • 4 tsp of cinnamon
  • 4 Tbsp maple syrup
  • 3 Tbsp chia seeds (mix with 1/3 cup of water and leave for 30 min)
  • 5 Tbsp water
  • ½ cup coconut oil
  • 3 tsp vanilla extract

Filling

  • 3 apples, diced
  • 4 Tbsp honey
  • 4 Tbsp coconut oil
  • 1 Tbsp cornstarch
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 1/8 tsp cloves
  • 1 Tbsp vanilla

To make the dough, blend rolled oats in a food processor to make fine flour. Add almond flour, coconut sugar, baking soda, salt, and cinnamon, and pulse to mix. Next add the coconut oil, chia gel, maple syrup, and vanilla extract. Pulse to mix until the mixture forms a ball. Turn out onto a sheet of plastic wrap, cover tightly and place in the fridge to chill for at least one hour.

Melt the coconut oil in a pot on medium heat. Add the honey, cornstarch, apples, and spices. Stir the mixture to cover the apples with the oil, honey, and spices.

Add in the vanilla extract and turn off the heat. Leave to cool for 10 minutes.

Remove dough from fridge, place on a piece of parchment paper and lay another sheet on top. Using a rolling pin, roll dough out. Place into a pie tin and remove the excess dough. Add the filling and use the remaining dough for your pie strips. Preheat the oven to 176 C and bake for about 30 minutes.
