Healthy Chocolate Cookies with Raspberry Chia Jam

Finally!!! I made it! Gluten-free, Sugar-free, Vegan Cookies. They are healthy chocolate cookies with a Raspberry Chia Jam.

They are best eaten straight away while crunchy. Sorry I don’t have the exact measurements, I was cleaning out my fridge, because of my move to another house. So here it is…

Recipe

1/2 cup almond meal

1/2 cup coconut flour

4 tbsp Chia seeds

2 “eggs” (2 tbsp ground flax seeds mixed with 4-5 tbsp water)

1 banana – mashed

2 tbsp peanut butter

Protein powder (optional)

2 tbsp coconut milk

1/4 cup coconut oil melted

Sweetener (optional)

4 tbsp cocoa powder

Mix dry ingredients in separate bowl and wet in other one. Than add wet ingredients to the dry ones. Mix the dough with hand and make little cookies on baking tray. Bake for 20 min on 250C.

Chia Jam

2 cups frozen berries

4 tbsp chia seeds

4 tbsp water

Sweetener (optional)

Vanilla

Blend everything together and put in the fridge to set.
