These are the fluffiest, loveliest pancakes I've made so far. They are incredibly easy to make, even early in the morning. You can have fun with the ingredients by switching the fruit from pears to bananas or apples and blueberries.
- 1 cup spelt flour
- 1 cup almond milk
- 2 tsp baking powder
- 1 free-range egg
- 1 pinch of salt
- 1 pear
- 2 Tbsp coconut sugar
- 1 greek yoghurt
- coconut oil
- caramel, to serve
Put the flour, baking powder, milk, egg, coconut sugar and salt in a mixing bowl and combine. Add grated pear or fruit of your choice and stir until smooth.
On a large pan melt a spoonful of coconut oil. Then flipping over and cooking for a few minutes more until they’re done.
Serve them with a bit of yoghurt and caramel. Enjoy!
