A lot of you are asking me how to make homemade coconut milk, which I agree is the best you can get, and cheaper! So here is a really simple recipe to make coconut milk using shredded coconut and water, if you want it sweet you can use dates or any other sweetener.
- 1 1/2 cups shredded, unsweetened coconut
- 4 cups water
- Pinch sea salt
- 1 teaspoon vanilla extract or the seeds of 1 vanilla bean
- 4 pitted medjool dates
Add all ingredients to a high speed blender. Blend for at least one minute or more, or until the milk is very creamy and you no longer see pieces of shredded coconut. Take a cheesecloth or a nut milk bag and pour in the blend and squeeze out as much liquid (milk) as you can. Pour it into a container and leave it in the fridge for max. 5 days. The leftover pulp is your coconut flour, so use it as a base of a raw cake or cookies or chia pudding!
