Since I don’t have my extra strong blender here I have to make some changes in my diet. So I baked muffins, yes healthy muffins 😉 Instead of flour I used almond pulp and instead of sugar, Agave syrup… Here is the recipe for helthy almond pulp chocolate muffins.
- 1 cup almond pulp*
- 1/2 cup Agave syrup
- 2 tbsp real Vanilla
- 4 tbsp melted coconut oil
- 4 eggs
- 200ml almond/rice/oat/coconut/soy milk
- 2 tbsp baking powder
- 2 tbsp of raw chocolate powder
- pinch of Himalayan salt
- (I added strawberries and raisins, but you can also add banana, berries etc.)
Mix the dry ingredients together and wet ingredients together, then mix both and bake in 300C for 15min.
