Best Vegan Waffles with Coconut Yoghurt

In our house waffles are one of those staple dishes we do for midnight snacks, you’ve read right – not for breakfast. Either we are fully intoxicated on a Friday evening or we’ve had an overall bad day. Either way we will always turn to our trusty waffle maker, it never lets us down. Whatever we mix in the bowl (usually anything we have in our pantry) and pour it into the warm crispy maker it will turn out utterly delicious… Well, there was one Friday night when we’ve only had spelt flour, organic eggs and cheese and we’ve mixed it all with water; it didn’t turn out quite like we expected it, but it did the trick for that particular moment.

After several attempts I’ve finally found the perfect waffle base that you can customise for yourself.

Cinnamon apple? Add cinnamon and baked apples.
Strawberry chocolate? Add strawberries and 85% dark chocolate.
Banana peanut butter? Add banana slices and a little crunchy peanut butter.

This simple base really is the perfect everyday waffle that you can then dress up as you please. You know, for those fun Friday nights or Sunday mornings.

Ingredients*

  • 1 ½ cup spelt flour
  • ½ cup oats
  • 1 tsp baking powder
  • 1 tsp apple cider vinegar
  • 1 cup almond or coconut milk
  • pinch of salt
  • 3 Tbsp coconut oil
  • 2 Tbsp coconut sugar
  • 1 tsp vanilla extract
  • ⅓ cup berries
  • a few Tbsp coconut yoghurt

*This batter will be perfect for fluffy pancakes as well, if you don’t have a waffle maker.

First mix almond milk with apple cider vinegar (it will turn into vegan buttermilk) leve aside for at least 5min. Meanwhile mix spelt flour with oats, baking powder, salt, vanilla, coconut sugar and coconut oil. Carefully mix in almond milk. Pour the batter into the waffle maker. When ready serve with berries and coconut yoghurt.
