Raw Almond Butter Cake

Almond butter is a great tasting source of protein and is by far more delicious than any other nut butters. It contains significantly more fiber, calcium, potassium, iron and manganese than peanut butter, and about half the saturated fat, although a slightly higher total fat content. So it’s a necessity to make a Raw Cake with a tasty Almond Butter.

Base

  • 1.5 cups of raw unsalted almonds
  • 6 dates, pitted and soaked
  • ¼ teaspoon vanilla extract
  • Pinch of sea salt
Combine the crust ingredients in a food processor and blend with an S-blade until the crust clumps together on the sides.  Pour crust ingredients into a 9” pie plate and flatten out from the center to the sides.  Put aside.

Cream 1

  • 1 ¼ cup almond butter
  • ½ cup rice malt syrup
  • ¼ cup + 1 tablespoon of cacao powder
  • ¼ cup hemp milk
  • 2 tablespoons cacao butter
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
Combine all the filling ingredients in a food processor and blend until mixed together, the mixture will be pretty thick.  Spread the mixture into the pie dish and gently spread evenly.  Do not press the filling down too much or else it will get too dense, spread it just enough to fill the pie.

Cream 2

  • 1 cup soaked cashews
  • ½ cup rice malt syrup
  • 1 cup orange juice
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
  • 1/2 cup orange zest
  • 1 1/4 cup coconut oil, melted

Blend everything in a blender and add the cream to the pie tin. Decorate as you wish. Serve with a scoop of vanilla coconut ice cream.
