Gluten free Nectarine Tart

Even though the summer is coming to an end, you can still enjoy some of the freshest fruit nature has to offer. Not only that we get refreshed with the most finest colourful fruit, we also care for our body with their vitamins and minerals. Summer is the time when it is absolutely necessary to seize the moment and freeze everything that grows – apricots, nectarines, peaches, blueberries, raspberries, cherries, pears, strawberries and so much more! Maybe make a delicious sugar free jam, compote, various gravies or cottage cheese dumplings, that you can also freeze!

  • Ingredients
  • 1 cup almond meal/flour
  • 1/2 cup rice flour
  • 1/4 cup arrowroot flour
  • pinch of salt
  • 2 tsp baking powder
  • 1/2 cup coconut sugar
  • zest of 1 lemon
  • 1/2 cup almond milk
  • 2 Tbsp coconut oil
  • 1 egg
  • 1 tsp vanilla extract
  • 6 nectarines (or any other seasonal fruit)

Here is a comforting “goodbye to summer” nectarine tart! It’s so soft it feels like you’re actually eating a hug.

Gluten free Nectarine Tart

Preheat your oven to 180 °C. In one bowl mix all the dry ingredients (almond flour, rice flour, arrowroot flour, salt, baking powder, coconut sugar and lemon zest) and in another bowl mix the wet ingredients (egg, oil, milk and vanilla extract). Carefully mix in wet ingredients to the dry ingredients. Transfer it to a greased tart tin and decorate with sliced nectarines. Bake 45–55 minutes. Serve when slightly cooled down.
