The best healthy banana bread or muffins

As promised I'm posting the best healthy banana bread ever made in Teresamisu world! These can be made into muffins as well. It's funny how the best things come with almost no ingredients and with your partner who doesn't know a thing about cooking or as he says "no, I know a lot about cooking, I just know how much you love doing it, so I leave it to you!" Which is actually true, I can be a monster in the kitchen sometimes, so it's better to leave me be ;) It was quite different this time, I was dancing around listening to music and my partner and I joined forces and made this moist and sweet banana bread. It's even better the next day toasted in the toaster, drizzled with honey or a good homemade jam. Mmmmm

  • Ingredients
  • 2 medium bananas
  • 2 Tbsp coconut oil or butter
  • 2 Tbsp honey
  • 1 Tbsp coconut sugar
  • 1 Tbsp vanilla extract
  • 3 eggs (or 3 chia eggs, 3 Tbsp chia seeds mixed with 9 Tbsp water. And use extra 1/2 almond milk for moisture if your not using eggs)
  • 1/2 cup almond flour
  • 1/2 cup walnut flour
  • 1/2 cup coconut flour (if you’re not gluten intolerant you can use 1 cup spelt flour)
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 tsp ground ginger
  • 1/2 cup chopped dark chocolate (optional)

Blend together bananas, coconut oil, honey, vanilla, 3 eggs until well combined. Than into seperate bowl mix all your dry ingredients, when combined, slowly start adding your wet mixture. Pour into a prepared loaf tin or muffin tin, sprinkle with walnuts and bake at 180C for 20-30min.
